Vegan Protein Bars With Dates

 These vegan protein bars with dates are perfect for a hot summer day! They are a great alternative to store bought brands since you can actually see what is going in to them versus mystery ingredients. Using a vegan-plant based protein powder makes this easier to digest, non-allergic, alkaline forming and free of antibiotics, growth hormones and steroids.

Vegan Protein Bars With Dates

FIXINGS

 

1 cup old-fashion oats

 

1 Tbsp fiber (or 1/4 cup ground flaxseed)

 

1/2 cup shredded coconut (unsweetened)

 

4 scoops plant based protein powder (chocolate or vanilla) — I did a ratio of 3 chocolate/1 vanilla

 

1/2 cup almond butter

 

1/4 cup honey

 

1 Tbsp almond milk

 

1 Tbsp vanilla paste

 

1/2 cup chopped dates

 

 

PUTTING IT TOGETHER

 

Fold all of the dry ingredients together. Add in the almond butter, honey, almond milk and vanilla until fully combined. Fold in dates as a last step. Easy peasy!

Line a 6″ x 9″ pan with parchment paper, press your mixture in to the pan and flatten out. Put in the freezer for at least 1 hour. Remove and cut in to bars.

Cover and store the vegan protein bars with dates in the freezer.

Best served frozen or cold!

 

 

**Disclaimer — Since these are not baked and do not have many binding elements, they are best eaten cold. If they thaw out they will get a little crumbly.
